Old Fashioned Stirred Custard

2 eggs
1/2 cup plus 2 T sugar
1 1/2T all purpose flour
3 cups milk, scalded
1 tsp vanilla extract


Beat eggs until frothy. Add sugar and flour, beating until thick. Gradually stir about 1 cup milk into yolk mixture; add to remaining milk, stirring constantly. Pour into top of a double boiler; bring water to a boil. Reduce heat to low; cook, stirring occasionally, for 30 minutes or until thickened. Stir in vanilla.
