Roys Apricot Fried Pies

3 (6oz) packages dried apricots
2 1/2 cups water
1 1/2 cups semisweet chocolate mini- morsels (optional)
3 cups all-purpose flour
1/2 cup sugar
1/2 tsp salt
3/4 cup butter, softened
1/2 cup plus 2 T cold water
Vegetable oil
Additional sugar


Combine apricots and water in a medium Pan; bring to a boil. Reduce heat, cover, and simmer 10 minutes, stirring occasionally. Uncover and simmer and additional 10 minutes or until liquid is absorbed. Cool mixture to room temperature, and stir in chocolate morsels, if desired. Set aside. Combine flour, sugar, and salt in a bowl; cut in butter, using a pastry blender, until mixture resembles coarse meal. Sprinkle water over surface of flour mixture; stir with fork until dry ingredients are moistened. Shape pastry into a ball; flatten ball into a disc; wrap with plastic wrap. Chill 30 minutes. Roll dough to 1/4 inch thickness on a lightly floured surface. Cut into 6 inch circles (use a saucer) Place 3 to 4 T apricot mixture in center of each pastry circle. Moisten edges of pastry; fold in half. Crimp pastry edges firmly together using a fork dipped in flour. Heat 1 inch of oil to 375 degrees in a large skillet. Cook pies, in batches, until golden brown on both sides, turning once. Drain well on paper towels. Sprinkle with sugar or powdered sugar, if desired.
