1 pt. light cream
1/2 cup granulated sugar
4 egg yolks
1 whole egg
1 drop vanilla extract
pinch of salt
2-1/2 oz. bitter chocolate
whipped cream


Preheat oven to 225 degrees. Heat cream until hot but not boiling. Add half the sugar and stir until sugar has dissolved. In separate saucepan, beat yolks and whole egg. Add remaining sugar, vanilla and salt. Slowly pour heated cream into the eggs, stirring constantly. Melt chocolate in a heavy saucepan over a low flame. Remove from heat and very slowly add half the cream and egg mixture, stirring constantly. Add remainder of mixture and stir until well mixed. Strain through a fine sieve. Pour into individual ceramic or glass serving dishes and place them in a shallow pan of hot water. Bake in preheated oven for 20 minutes. Chill. Top with whipped cream if desired.
