French Onion Soup

Ingredients:

2 large onions thinly sliced
1/4 cup butter
2 Pt. beef broth
salt, pepper to taste
French bread
1 1/2 cup swiss or Gruyere Cheese



Instructions:

Fry onions in butter until golden. Add broth, simmer until reduced in volume by 1/4. Season to taste with salt and pepper. Pour into heat proof bowls add the bread pieces and top with the cheese. Bake in oven till cheese is melted and slightly browned. optional: add 1 tsp. Worcestershire sauce and 1/8 tsp ground thyme
