2 cups self rising cornmeal
1 T sugar
1 small onion minced
1 egg beaten
3/4 cup buttermilk plus 1 T


Mix together cornmeal and sugar. Add onion, egg and milk, stirring lightly. Drop teaspoon of batter for each hushpuppy into hot deep fat, frying only a few at a time, until golden brown. Drain on paper. Recipe can be doubled.
