Baked Mashed Potato Side Dish.

6 potatoes cubed and cooked until fork tender
1/4 cup milk
1 pkg. 8 oz cream cheese
1 cup sour cream
1 tsp Parsley flakes
1/2 tsp. crushed garlic
1/2 cup shredded Cheddar cheese
1 T butter


Place all ingredients except cheese, in a large mixing bowl. With an electric mixer, blend ingredients until smooth on medium-high speed. Spoon mixture into a lightly greased 8X12 inch casserole dish. Cover and bake at 325/350 degrees for 30 to 40 min. Remove form oven an sprinkle with cheese. Bake an additional 5 to 10 minutes or until cheese is melted. Variation: You can substitute cottage cheese for the cream cheese. Add one egg. Crumble crackers over top and cook uncovered. Both ways can be made ahead and frozen just add the crackers or cheese just before baking.
