Peanut Butter Cookies

1 cup sugar
1 cup creamy peanut butter
1 egg 1 tsp vanilla


Place sugar and peanut butter in a large mining bowl. Beat with an electric mixer on medium speed until light and fluffy. Add egg and beat well. Stir in vanilla. Dough will appear dry. Pinch off small pieces of dough and roll by hand into 1 inch balls. Place balls on an ungreased cookie sheet about 1 inch apart. Slightly mash each ball with a fork in a criss-cross fashion to form decorative ridges. Bake on the top rack of a 350 degree oven for approximately 10 minutes or until lightly browned. Cookies are very soft while warm, but attain a crispy-chewy texture once cooled. Loosen cookies from baking sheet while warm, but do not remove from the sheet until cool. No I did not forget the flour. It does't use flour. Makes 2 to 2 1/2 doz.
