Ingredients:1/2 cup quartered pecans
30 vanilla carmels
9 cups pecans chopped
9 cups semisweet chocolate chips
Instructions:Cover cookie sheet with wax paper. Arrange three pecan quarters on prepared cookie sheet to represent a turtle's head and front legs; repeat procedure until all the quarters are used. Melt caramels in top of a double boiler over simmering water, stirring until smooth. Stir in chopped pecans drop carmel mixture by teaspoonfuls onto arranged pecan quarters to form bodies. (Make sure the the tips of the pecans quarters extend from the caramel ) Cool Melt chocolate chips in top of a double boiler over simmering water, stirring until smooth. Frost carmel bodies with melted chocolate chips. Allow chocolate to set. Store in an airtight container with wax paper between layers of turtles. Do not chill turtles; the carmel will "sweat."
