Peanut Butter Roll Candy
Ingredients:1 small potato boiled with jacket on
1 box powdered sugar or more
1/2 tsp vanilla
Instructions:Boil one potato,let cool, peel and mash with fork till smooth. Mash potato with the powder sugar and vanilla. Add enough sugar till it is the consistency of pie crust dough. Roll out with rolling pin and powder sugar to keep it from sticking on counter top or waxed paper. Roll it thin like pie crust. Spread peanut butter all over and roll it up jelly roll fashion. Cover with plastic wrap an chill. When cold slice into slices. Optional: 1 can Betty Crocker white frosting mix instead of the potato can be used. I like the old fashion way best.
