1 cup sugar
4 eggs, beaten
1 (14 oz) can sweetened condensed milk
1 3/4 cups milk
2 tsp vanilla extract
1/2 cup sliced almonds, toasted


Pour sugar into a 10 inch heavy or cast iron skillet; place over medium heat, stirring constantly with a wooden spoon, until sugar melts and becomes light golden brown. Pour syrup into a 9 inch round cake pan; set aside. Combine eggs and next 3 ingredients; beat well with a wire whisk. Pour over caramelized sugar; cover pan with aluminum foil, and place in a larger shallow pan. Pour hot water to depth of 1 inch into larger pan. Bake at 350 degrees for 55 minutes or until a knife inserted near center comes out clean. Remove pan from water, and uncover; let cool on a wire rack. Cover and chill 4 to 6 hours. Loosen edges with a spatula. Invert flan onto plate; arrange almonds around top edge.
