Spinach-Stuffed Manicotti

12 manicotti shells
2 (10 oz) packages frozen chopped spinach, thawed and well drained
2 cups (8oz) shredded mozzarella cheese
2 cups cottage cheese
1/2 cup grated Parmesan cheese
1 small onion, diced
2 T dried parsley flakes
1 tsp dried whole oregano
Dash of hot sauce
Dash of ground nutmeg
1 (32 oz) jar spaghetti sauce with mushrooms, divided
1/4 cup grated Parmesan cheese


Cook manicotti shells according to package directions; rinse, drain, and set aside. Combine spinach and next 8 ingredients, stirring well. Stuff manicotti shells with spinach mixture. Spoon 1 cup of spaghetti sauce into a lightly greased 13 x9x2 inch baking dish. Arrange stuffed shells over sauce. Spoon remaining sauce over shells sprinkle with 1/4 cup Parmesan cheese. Cover tightly with aluminum foil, and bake at 350 degrees for 45 minutes or until thoroughly heated.
