Carrot Cake

Ingredients:

2 cups sugar
4 eggs
2 tsp baking powder
2 tsp soda
1/2 tsp salt
2 tsp cinnamon
3 cups grated carrots
1/2 tsp vanilla
1 1/2 cups Oil
2 cups flour
1/2 cup chopped pecans
1/2 tsp almond extract



Instructions:

Cream sugar, oil and eggs. Beat well. Sift dry ingredients and add to other mixture. Fold in carrots, nuts, vanilla and almond extract. Bake 325 degrees for 30 to 40 min.
