Single crust:
1 1/2 cups sifted all purpose flour
1/2 tsp salt
1/2 cup shortening (solid)
4 to 5 T cold water

Double or lattice top
2 cups flour
1 tsp salt
2/3 cup shortening
5 to 7 T cold water


Sift flour and salt. Cut in shortening till course. Sprinkle water in 1 spoon full at a time tossing mixture. Form into a ball, roll and knead a few times to make it flakey. Roll to 1/8 inch thick. Place in pie pan and cut and scollop edges. Bake 350 degrees for custard pies. Leave unbaked for other fillings that have to be baked such as pecan or apple.
