Banana Pudding

2 cups milk
2/3 cup sugar
2 T cornstarch
1/2 cup sugar plus 2 T sugar
2 eggs
2 eggs seperated
1/8 tsp salt
1 T butter
1 tsp vanilla
6 ripe bananas
Vanilla Wafers


Scald milk in top of double boiler and cool slightly; beat eggs and two egg yolks and 1/2 cup of sugar, salt and cornstarch. Pour 1/2 cup of scalded milk cooled slightly over egg mixture and stir, return the egg mixture to remaining milk in boiler. Cook and stir until mixture in smooth and thick. Abt 20 minutes. Remove from heat and cool slightly, add butter and vanilla. Arrange wafers and bananas in a layer in 9' backing dish. Pour pudding over them and repeat layers and pudding until dish is almost filled. Cool. Heat oven to 425 degrees. Beat egg whites until stiff, adding 2 T sugar gradually. Beat till glossy and spread on top. Bake for 15 minutes or until golden brown.
