Mustard Shallot Vinegarette Dressing

3/4 cup olive oil
2/3 cup red wine vinegar
3 T Dijon mustard
1 large shallot, minced (or green onion)
1 tsp salt
1 tsp black pepper
1 tsp sugar.


In large jar with tightfitting lid, combine all ingredients; shake well. Refrigerate if not serving right away. Bring to room temperature and shake well before using.
