Coconut Cake

2 cups all purpose flour
1/2 cup shortening (Crisco solid)
2/3 cup milk
1 1/2 cups sugar
1/2 tsp salt
1 T baking powder

2 eggs
1/2 cup milk
1 tsp vanilla
1 tsp butter flavoring


Mix the first 6 ing. for abt. 2 minutes then add the next 4. Pour into three round pans well greased and floured. Bake at 350 degrees for 30 minutes or until done. Filling: 2 egg yokes 2/3 cup sugar 1 tsp flour 1 small can evaporated milk 3/4 pkg frozen coconut 2 T butter Cook over medium heat until thick. Frosting: 2 egg whites 1 cup sugar 1/2 tsp cream of tarter 1 tsp vanilla 3 T water Place all above ing. except vanilla in double boiler, (make sure the water is boiling) Beat for 3 to 5 minutes with electric beaters until soft peaks add the vanilla. Assembly. Put a layer of the filling on two cakes and layer. (Can put on all three if enough) Frost the whole cake and sprinkle with coconut flakes. From: Susan McLaughlin
