Top round steak or cubed steaks are the best cuts for chicken fried steaks. Buy about 1/2 lb. for each person. Tenderize the steak by pounding it to about 1/4 inch thick. Salt and pepper the steaks and coat with flour. Brown steaks in hot oil, turning and frying over medium heat until done. This should take about 5-8 minutes on each side. Serve with cream gravy. Gravy: Take 3 tablespoons of the meat drippings in your skillet, and be sure to include the browned particles in the skillet. Discard rest of the drippings. To the 3 tablespoons of drippings, add 3 tablespoons of flour. Blend over low heat until smooth and browned. Add 2 cups milk; cook until mixture boils and thickens, stirring constantly. Season with salt and pepper. Makes about 2 cups of gravy. Enough for about 6 steaks.
