Sweet and Sour Shrimp

1 1/4 lb. shrimp, peeled and deveined
Veg. Oil
2 eggs beaten
1/2 Cup flour
1 green pepper cut into thin strips
1 can 15 oz pineapple chunks
1/2 cup vinegar
2/3 cup sugar

1/2 cup water
1 1/2 T cornstartch stired in water.

1/2 tsp salt
1 T soy sauce


In med size skillet heat 1 1/2 or 2" of oil. Blend eggs with flour for batter. Add shrimp and toss to coat evenly. Fry in oil until golden on all sides. Remove to platter. Pour off all oil except 2 T. Saute green pepper until translucent but not limp. Add Pineapple with juice and vinigar, sugar, cornstarch paste,salt and soy sauce. Cook 6 or 7 min. Stiring constantly. Stir in shrimp. Serve over rice.
