German Hot Potato Salad

6 medium potatoes abt 2 lb.
6 slices bacon, cut into 1/2 inch pieces
1/2 cup chopped onion
2 tsp sugar
2 tsp salt
1 tsp all purpose flour
1/8 tsp pepper
1/2 cup water
3 T red wine vinegar
minced parsley for garnish


In 4 quart saucepan over high heat, heat unpeeled potatoes and enough water to cover, to boiling. Reduce heat to low; cover and simmer 20 to 30 minutes until potatoes are fork tender. Drain, peel and dice potatoes. Meanwhile, in 10 inch skillet over medium heat, cook bacon until crisp; remove bacon to paper towels to drain. Spoon off all but 2 T bacon fat from skillet, add onion; cook until tender, abt. 5 minutes. Stir in sugar, salt, flour and pepper until blended. Gradually stir in water and vinergar. Cook, stirring constantly, until mixture is slightly thickened and boiling. Gently stir in potatos and bacon; heat through. Garnish with parsley.
