Cream Potato Cheese Soup

3 cups chopped potatoes
1 cup water
1/2 cup celery diced
1/2 cup carrot diced
1/4 cup onion diced
1 tsp parsley flaked
1 chicken bouilon cube
1/2 tsp salt
dash of pepper
1 1/2 cups milk
2 T flour
1/2 lb. Velveeta pasteurized process cheese spread, cubed.


In large sauce pan conbine all ingredients except milk, flour and cheese. Cover and simmer 15 to 20 minutes or until veg. are tender. Gradually add milk to flour until smooth. Add milk mixture to vegetable and cook until thickened. Add cheese until melted.
