Frito Pie

1 lb ground beef
2 T vegetable oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 (12 oz) can pinto bean
1/4 cup New Mexican red chile powder (more or less to taste)
3 T tomato paste
1 cup water
1 T honey
1 tsp oregano, dried
1/2 tsp ground cumin
salt and pepper to taste
6 bags Fritos Corn Chips
1 cup grated cheddar cheese
1 small white onion, diced
1/2 cup sour cream
2 pickled Jalapenos, sliced (optional)


Brown Meat in vegetable oil over medium high heat. Add yellow onion and saute for 2 minutes. Add garlic and saute for 1 minute. Add beans, chile powder, tomato paste, water,honey, oregano and cumin and bring to a simmer. Allow mixture to simmer for 10 to 15 minutes, stirring occcasionally, until thickened. Season with salt and pepper. Slice open each bag of Fritos along the longest edge and ladle in some beef mixture. Garnish with cheese, white onion and sour cream, and Jalapenos, if desired. Optional: You can place fritos in a lagre serving dish and pour meat mixture on top and garnish. May be doubled.
